Description

A classic Strawberry Cobbler with fresh strawberries, lemon-brightened filling, and a buttery biscuit topping baked until golden and bubbly.


Ingredients

  • 1/2 cup white sugar
  • 2 tablespoons cornstarch
  • 1/4 cup lemon juice
  • 3 cups fresh strawberries, hulled and sliced
  • 2 tablespoons cold butter, diced
  • 1 cup all-purpose flour
  • 1 tablespoon white sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3 tablespoons cold butter, cubed
  • 1/2 cup heavy cream

Instructions

  1. Preheat oven to 400°F and butter a 9-inch baking dish.
  2. Combine cornstarch, lemon juice, and sugar in a saucepan.
  3. Cook over medium heat until thickened.
  4. Remove from heat and fold in strawberries.
  5. Transfer mixture to baking dish and dot with butter.
  6. Mix flour, sugar, baking powder, and salt in a bowl.
  7. Cut in cold butter until crumbs form.
  8. Stir in heavy cream until combined.
  9. Sprinkle topping over strawberry mixture.
  10. Bake for 25 minutes until golden brown and bubbly.
  11. Cool slightly before serving.
