Description

  • ½ cup unsalted butter, melted (113g)
  • 1 cup granulated sugar (200g)
  • ¼ teaspoon kosher salt
  • 1 large egg, room temperature
  • 1 teaspoon pure vanilla extract
  • 1 ¼ cups all-purpose flour (157g)

Instructions

  1. Preheat oven to 350°F and line an 8×8-inch metal baking pan with parchment paper.
  2. Wash, hull, and chop strawberries into small pieces. Pat dry thoroughly with paper towels to remove excess moisture.
  3. In a medium bowl, whisk together melted butter, granulated sugar, and kosher salt until combined.
  4. Add egg and vanilla extract, whisking until smooth and fully incorporated.
  5. Stir in flour until a few streaks remain.
  6. Gently fold in chopped strawberries without overmixing.
  7. Spread thick batter evenly into prepared pan.
  8. Bake for 25 to 30 minutes until edges are lightly golden and a tester shows a few moist crumbs.
  9. Cool completely before lifting from pan and slicing into bars.

Notes

  1. Use strawberries after chopping and removing tops for accurate measurement.
  2. Do not use frozen strawberries as they add too much moisture.
  3. You can substitute one 1.2-ounce bag of chopped freeze-dried strawberries.
  4. For deeper flavor, replace half the granulated sugar with brown sugar.
  5. Store in airtight container at room temperature for 1 day or refrigerate up to 5 days.
  6. Freeze up to 3 months and thaw before serving.
  7. Use a metal pan for best baking results.
