Description
These healthy strawberry banana muffins are soft mini muffins made with ripe banana, Greek yogurt, fresh strawberries, and no added sugar. They are a gentle breakfast or snack for babies, toddlers, and baby-led weaning meals.

- 1/2 cup mashed very ripe banana, measured after mashing
- 1 large egg
- 2 tablespoons melted unsalted butter or coconut oil
- 1/4 cup plain Greek yogurt
- 1/2 teaspoon vanilla extract
- 3/4 cup white whole wheat flour or all-purpose flour
- 1/2 teaspoon aluminum-free baking powder
- 1/4 teaspoon baking soda
- Pinch of salt, optional
- 1/2 cup fresh strawberries, chopped into very small pieces
Instructions
- Heat the oven to 350°F. Line a mini muffin pan with paper liners or use a silicone mini muffin pan, then lightly spray the cups with oil.
- Mash the banana until smooth and measure 1/2 cup.
- In a large bowl, whisk the mashed banana, egg, melted butter or coconut oil, Greek yogurt, and vanilla until smooth.
- Add the flour, baking powder, baking soda, and optional salt. Stir just until the flour streaks disappear.
- Fold in the chopped strawberries gently.
- Scoop 1 tablespoon of batter into each prepared mini muffin cup.
- Bake for 11 to 15 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the pan for 5 to 10 minutes before removing them.
Notes
- Measure the banana after mashing because banana size can vary.
- Chop strawberries very small, no larger than 1/4 inch, for even baking and easier toddler bites.
- Lightly spray liners or silicone cups with oil to help prevent sticking.
- Do not overmix after adding the flour, or the muffins may turn dense.
- Use sour cream instead of Greek yogurt if needed.
- Swap strawberries for finely chopped blueberries or blackberries.
- For older kids or adults, add 2 to 3 tablespoons pure maple syrup or cane sugar, or use vanilla Greek yogurt for a sweeter muffin.
