Description

Spinach and Feta Quesadillas are a quick, healthy Mediterranean meal packed with fresh spinach, creamy feta, and crisp tortillas.


Ingredients

Scale

4 medium tortillas (flour, whole wheat, or gluten-free)

2 cups fresh spinach, chopped

1 cup feta cheese, crumbled

2 tablespoons olive oil or butter

Optional:

1/4 cup sun-dried tomatoes, chopped

1/4 cup black olives, sliced

1/2 cup grilled chicken, diced


Instructions

1. Rinse and chop the spinach.

2. Crumble the feta cheese.

3. Prepare optional add-ins.

4. Spread spinach and feta on one half of each tortilla.

5. Add optional ingredients if desired.

6. Fold the tortilla gently.

7. Heat a skillet with a small amount of oil or butter.

8. Cook each tortilla 2–3 minutes per side until crisp.

9. Slice into wedges.

10. Serve warm.

Notes

Serve with yogurt, tzatziki, or hummus.

Chop add-ins finely for easier folding.
