Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1/4 cup honey
  • 2 tablespoons soy sauce
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon ground black pepper
  • 1/2 teaspoon cayenne pepper (adjust for heat level)
  • 1 tablespoon olive oil for frying
  • 1 lb elbow macaroni
  • 2 cups shredded sharp cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup whole milk
  • 1/4 cup heavy cream
  • 3 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Crispy bacon crumbles (optional)
  • Fresh parsley for garnish
  • Red pepper flakes for extra spice

Instructions

  1. Start by preparing the chicken. Heat olive oil in a large pan over medium heat. Season the chicken breasts with salt, pepper, and a pinch of cayenne. Cook the chicken in the pan for about 5-7 minutes on each side, until golden and crispy.
  2. While the chicken cooks, prepare the honey pepper glaze. In a small saucepan, combine honey, soy sauce, apple cider vinegar, black pepper, and cayenne pepper. Bring to a simmer over medium heat and let it cook for 3-4 minutes until it thickens. Once the chicken is done, brush the glaze generously over the chicken and cook for another 1-2 minutes on each side, allowing the glaze to caramelize slightly.
  3. While the chicken is cooking, boil the macaroni according to package instructions until it’s al dente. Drain the pasta and set it aside. In a separate pot, melt the butter over medium heat. Stir in the flour and cook for about 1-2 minutes to make a roux. Gradually whisk in the milk and heavy cream, and cook until the sauce thickens.
  4. Once the sauce is smooth, stir in the cheddar and Parmesan cheese, garlic powder, and a pinch of salt and pepper. Continue stirring until the cheese has melted and the sauce is thick and creamy. Pour the cheese sauce over the pasta and mix well until everything is evenly coated.
  5. To serve, place a generous scoop of the creamy mac and cheese on a plate, and top it with your spicy honey pepper chicken. Drizzle extra glaze over the chicken for added flavor and garnish with fresh parsley or crispy bacon if desired.

Notes

  1. Store leftovers in an airtight container in the refrigerator for up to 3-4 days.
  2. Reheat on the stovetop with a splash of milk to maintain creaminess.
  3. For a lighter version, use grilled chicken instead of fried chicken.
  4. Feel free to add veggies like steamed broccoli for added nutrition.
