Description

A moist, warmly spiced quick bread made with shredded zucchini, carrot, coconut oil, walnuts, dried cranberries, and fresh orange zest.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 2 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 cup coconut oil, softened or melted
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup shredded zucchini
  • 1/2 cup shredded carrot
  • 1/2 cup chopped walnuts
  • 1/2 cup dried cranberries
  • Zest of 1 orange

Instructions

  1. Preheat oven to 350 degrees Fahrenheit and grease a 9 x 5 x 3-inch loaf pan with butter or cooking spray.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a separate bowl, beat together the eggs, granulated sugar, brown sugar, coconut oil, and vanilla extract until smooth.
  4. Add the wet ingredients to the dry ingredients and stir just until combined. The batter will be thick.
  5. Fold in the shredded zucchini and shredded carrot until the batter loosens and the vegetables spread evenly.
  6. Add the walnuts, dried cranberries, and orange zest, then stir gently until combined.
  7. Spoon the batter into the prepared loaf pan and smooth the top.
  8. Bake for 50 to 60 minutes, or until a wooden toothpick inserted into the center comes out clean.
  9. Cool in the pan for 10 to 15 minutes, then turn the loaf onto a wire rack to cool completely before slicing.

Notes

  1. For muffins, divide the batter into a prepared muffin tin and bake at 350 degrees Fahrenheit for 18 to 22 minutes.
  2. Start checking the loaf at 50 minutes because oven temperatures can vary.
  3. Use vegetable oil or canola oil in place of coconut oil if preferred.
  4. Let the bread cool fully before slicing for cleaner pieces.
