Description

A warm, chunky Spiced Peach Jam made with ripe peaches, lemon juice, low-sugar pectin, cinnamon, allspice, cloves, and sugar. This homemade preserve has bright peach flavor with cozy spice.

Ingredients

Scale
  • 4 cups peeled, pitted, chopped peaches
  • 1 tablespoon lemon juice
  • 3 rounded tablespoons low-sugar pectin
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground allspice
  • 1/8 teaspoon ground cloves
  • 3 cups granulated sugar

Instructions

  1. Peel, pit, and slice the peaches. Chop them into small pieces, then mash lightly with a potato masher, keeping small fruit bits rather than a smooth puree.
  2. Wash pint jars, lids, and rings in hot, soapy water. Keep jars hot until filling.
  3. Add chopped peaches to a large heavy pot over medium heat.
  4. Stir in lemon juice, pectin, cinnamon, allspice, and cloves.
  5. Bring the mixture to a hard boil over medium-high heat, stirring often. This usually takes about 20 minutes.
  6. Measure sugar into a separate bowl while the jam heats.
  7. Once the peach mixture reaches a hard boil that continues while stirring, add the sugar all at once.
  8. Stir constantly until the sugar dissolves and the jam returns to a full rolling boil.
  9. Boil for 5 minutes, stirring constantly so the jam does not scorch.
  10. Ladle hot jam into hot jars, leaving 1/4 inch headspace.
  11. Wipe jar rims, add lids and rings, and tighten until fingertip-tight.
  12. Process jars in a boiling water bath for 10 minutes for shelf-stable storage.
  13. Remove jars carefully and let them rest undisturbed for 12 to 24 hours.
  14. Check seals before storing. Refrigerate any unsealed jar and use within a few weeks.

Notes

  1. Recipe yields about 3 pint jars or 30 servings.
  2. For pantry storage, use the boiling water bath method rather than inversion canning.
  3. For refrigerator jam, skip the water bath, cool the jars, refrigerate, and use within a few weeks.
  4. Use ripe yellow peaches for the brightest peach flavor.
  5. Opened jars should be refrigerated and used within 3 to 4 weeks.
