Ingredients

2 chicken breasts (about 400 g), diced

2 tsp (5 g) Cajun seasoning

1 Tbsp (15 ml) olive oil

1 cup (200 g) orzo

2 cups (480 ml) chicken broth

½ cup (120 g) diced tomatoes

½ cup (120 ml) heavy cream

Fresh parsley, chopped (for garnish)

Optional: red pepper flakes for extra spice
Instructions

Season chicken: Toss diced chicken with Cajun seasoning and set aside.

Sear chicken: Heat olive oil in a skillet over medium heat. Cook chicken 5–6 minutes until golden and cooked through.

Toast orzo: Add orzo to the skillet and toast for 1 minute, stirring constantly.

Add broth & tomatoes: Stir in chicken broth and diced tomatoes. Bring to a simmer, cover, and cook 10–12 minutes, stirring occasionally.

Make creamy: Once orzo is tender, stir in heavy cream. Simmer 2–3 minutes until creamy.

Serve: Garnish with parsley and red pepper flakes. Serve hot.
Notes
Use rotisserie chicken for an even faster version.
Add veggies like bell peppers or spinach for extra nutrition.
Swap orzo with ditalini or pearl couscous if needed.
Adjust Cajun spice level based on preference.
