Description

A cold southwestern pasta salad made with rotini, chicken, beans, corn, and a creamy chipotle ranch dressing.


Ingredients

  • 12 oz rotini pasta
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 cup bell pepper, diced
  • 1 cup red onion, diced
  • 1 cup cherry or grape tomatoes, halved
  • 1/2 cup cilantro, chopped
  • 2 cups grilled chicken, chopped
  • 1 cup chipotle ranch dressing

Instructions

  1. Cook pasta according to package instructions, drain, and rinse with cold water.
  2. Drain and rinse black beans and corn.
  3. Dice bell pepper and red onion, halve tomatoes, and chop cilantro and chicken.
  4. Combine pasta, beans, corn, vegetables, cilantro, and chicken in a large bowl.
  5. Stir in dressing until evenly coated.
  6. Cover and refrigerate for at least 1 hour before serving.

Notes

  1. Rinse pasta well to keep the salad light.
  2. Add extra dressing before serving if needed.
