Description

Southwest Black Bean Soup is a hearty, plant-based comfort food made with black beans, tomatoes, aromatic spices, and vegetable broth. Ready in just 40 minutes, this vegan soup is filling, flavorful, and perfect for cozy weeknight dinners or meal prep.


Ingredients

  • 2 cans black beans, drained and rinsed (2 x 425 g)

  • 1 tbsp olive oil (15 ml)

  • 1 onion, chopped (150 g)

  • 2 garlic cloves, minced

  • 1 tsp ground cumin (2 g)

  • 1 tsp paprika (2 g)

  • 1 can diced tomatoes (400 g)

  • 4 cups vegetable broth (960 ml)

  • Salt and black pepper, to taste

Optional Toppings:

  • Sour cream (or vegan alternative)

  • Fresh cilantro

  • Lime wedges


Instructions

  • Heat olive oil in a large pot over medium heat. Sauté onion and garlic for 4–5 minutes until softened and fragrant.

  • Stir in cumin and paprika. Cook for 1 minute, stirring constantly.

  • Add black beans, diced tomatoes with juice, and vegetable broth. Stir well.

  • Bring to a boil, then reduce the heat and simmer uncovered for 20 minutes.

  • Season with salt and black pepper to taste.

  • Serve hot with your choice of toppings.

Notes

For a creamier texture, blend part of the soup with an immersion blender.

Add chili powder or cayenne for extra heat.

Double the batch and freeze portions for quick future meals.

Corn, zucchini, or bell peppers can be added for extra nutrition and flavor.
