Description

Southern Smothered Chicken is the ultimate comfort food—juicy bone-in chicken pieces seared to golden perfection, then gently simmered in a rich, creamy gravy infused with garlic, onions, thyme, and spices. This down-home classic is cozy, flavorful, and family-approved, all without the need for gluten.


Ingredients

  • 1.41.8 kg organic chicken (drumsticks + thighs), skin removed

  • 1 tsp smoked paprika

  • 2 tsp Lawry’s seasoning salt, divided

  • 1 tsp black pepper

  • 1 tsp garlic powder

  • 30 g organic all-purpose flour (or gluten-free alternative)

  • 60 g unsalted butter

  • 30 ml extra virgin olive oil

  • 4 garlic cloves, minced

  • 1 onion, chopped

  • 2 fresh thyme sprigs

  • 480 ml organic chicken stock or bone broth

  • 240 ml organic heavy cream


Instructions

  • Marinate the Chicken
    Combine chicken with 1 tsp Lawry’s seasoning salt, black pepper, garlic powder, and smoked paprika in a bowl. Mix well, then marinate in the fridge for at least 3 hours or overnight. Bring to room temperature before cooking.

  • Brown the Chicken
    In a deep skillet, heat olive oil over medium-high. Sear the marinated chicken 3–4 minutes per side until golden brown. Remove and set aside.

  • Sauté the Aromatics
    In the same skillet, melt butter. Add onions and cook until golden and caramelized, about 8–10 minutes. Add garlic and sauté for 1 minute.

  • Make the Gravy
    Sprinkle in flour, stirring to combine with the onions and garlic. Slowly add chicken stock, stirring constantly. Simmer for 2–3 minutes, then stir in the heavy cream.

  • Smother the Chicken
    Add thyme sprigs and the remaining 1 tsp Lawry’s seasoning salt. Return chicken to skillet, spoon gravy over, and simmer on low for 10–15 minutes until chicken is fully cooked and tender.

Notes

Onion patience = flavor payoff

Use whole milk or dairy-free cream if needed

Thicken sauce with a flour slurry if needed

Bone-in cuts retain more flavor and moisture
