Description

Southern-style smothered chicken baked until tender and finished in a creamy homemade gravy.


Ingredients

Scale
  • 2 lb chicken (white or dark meat)
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • Salt and black pepper to taste
  • 1/2 cup chopped green peppers
  • 1/2 cup sliced onions
  • 1 cup chicken broth
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1/4 cup all-purpose flour
  • 1/2 cup heavy cream
  • 1/2 tsp garlic powder

Instructions

  1. Preheat oven to 350°F.
  2. Season chicken evenly with spices.
  3. Brown chicken in a skillet with olive oil.
  4. Spread onions and peppers in a baking dish.
  5. Place chicken on top and add broth along edges.
  6. Cover and bake for 40–45 minutes.
  7. Remove chicken and reserve drippings.
  8. Melt butter and oil, then sauté onions.
  9. Stir in flour gradually.
  10. Add cream, drippings, and garlic powder.
  11. Return chicken to gravy.
  12. Bake uncovered until chicken reaches 165°F.

Notes

  1. Use dark meat for extra juiciness.
  2. Stir flour slowly to avoid lumps.
  3. Serve over rice or mashed potatoes.
