Description

A warm and comforting Small Batch Peach Cobbler made with juicy peaches, cinnamon, and a buttery crumble topping. Perfect for two servings.


Ingredients

  • 2 cups peaches, sliced
  • 2 tablespoons light brown sugar
  • 1/2 tablespoon cornstarch
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon sea salt
  • 2 tablespoons butter
  • 2 tablespoons granulated sugar
  • 4 tablespoons all-purpose flour
  • 1/8 teaspoon sea salt
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat oven to 400°F.
  2. Combine peaches, brown sugar, cornstarch, vanilla, cinnamon, and salt in a saucepan.
  3. Cook until bubbling, then simmer 10 to 15 minutes until thickened.
  4. Mix butter, sugar, flour, salt, and cinnamon until crumbly.
  5. Divide peach filling between two ramekins.
  6. Top evenly with crumble mixture.
  7. Bake 15 to 20 minutes until golden and bubbly.
  8. Cool several minutes before serving.

Notes

  1. Do not overfill ramekins.
  2. Fresh, frozen, or canned peaches work well.
  3. Serve warm with vanilla ice cream.
  4. Store leftovers in the refrigerator for up to 5 days.
