Ingredients
1 pound ground beef
½ onion (diced)
1 red bell pepper (diced)
1 can petite diced tomatoes (14.5 oz)
1 can crushed tomatoes (28 oz)
1 teaspoon minced garlic
1 tablespoon Italian seasoning
4 cups beef broth
12 oz lasagna noodles
½ cup ricotta cheese
1 cup mozzarella cheese (shredded)
1 cup parmesan cheese (shredded)
Instructions
1. Brown the ground beef in a large skillet over medium-high heat and drain grease.
2. Place beef into a 6-quart slow cooker.
3. Add diced onion, bell pepper, tomatoes, garlic, and seasoning.
4. Pour in beef broth and stir to combine.
5. Cover and cook on low for 6–8 hours or high for 3–4 hours.
6. Break lasagna noodles into bite-size pieces and stir into soup 30 minutes before serving.
7. Top with ricotta, mozzarella, and parmesan before serving.
Notes
Use lean beef to keep the soup lighter.
Add spinach or mushrooms for extra vegetables.
For gluten-free, use gluten-free lasagna noodles.
