Description

This Slow Cooker Hearty Chicken Stew is rich, thick, and filled with tender meat and veggies. Perfect for chilly evenings—dairy free, gluten free, and Whole30 compliant.


Ingredients

2 pounds chicken breasts (or thighs or 1 whole chicken, cut into 8 pieces)

1 pound carrots, sliced

3 cups potatoes, peeled and diced

2 cups celery, sliced

1 onion, diced

32 ounces chicken stock or broth

1 tbsp rosemary

1 tbsp thyme

1 tbsp minced garlic

1½ tsp salt

1 tsp pepper

1 tsp garlic powder

½ tsp onion powder

3 tbsp flour or arrowroot

3 tbsp cold water

Optional: parsley for garnish


Instructions

1. Add all ingredients except flour, water, and herbs to the slow cooker. Cook on high for 4 hours.

2. Remove chicken, shred, and return to pot.

3. Mix flour and water to form a slurry and stir in.

4. Cook another 15–25 minutes to thicken.

5. Taste, season, and serve topped with fresh herbs.

Notes

Use thighs for richer flavor.

Arrowroot thickens faster than flour.

Stores up to 4 days in fridge or 3 months frozen.
