2 cans (10 oz each / 284 g) red enchilada sauce

1 can (10 oz / 284 g) diced tomatoes with green chiles, drained

12 oz (340 g) corn tortillas, cut into wedges

2 cups (200 g) shredded fiesta blend cheese, divided
Instructions

Spray your slow cooker liner with nonstick cooking spray to prevent sticking.

Place the chicken breasts in the bottom of the slow cooker. Season with taco seasoning, salt, and black pepper.

Pour both cans of enchilada sauce and the drained tomatoes with green chiles evenly over the chicken.

Cover and cook on low for 4–5 hours, until the chicken is tender and fully cooked.

While the chicken cooks, cut the corn tortillas into wedges.

Once cooked, shred the chicken directly in the slow cooker using two forks.
