Description
A comforting slow cooker dinner featuring tender chicken breasts and buttery baby potatoes in a creamy ranch sauce, finished with melted cheddar cheese and fresh parsley.
Ingredients
Scale
- 1.5 pounds boneless, skinless chicken breasts
- 1 pound baby potatoes, halved
- 1 packet ranch seasoning mix
- 1 can cream of chicken soup
- 1 cup chicken broth
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt, to taste
- Black pepper, to taste
- 1 cup shredded cheddar cheese
- 2 tablespoons fresh parsley, chopped
Instructions
- Wash the baby potatoes thoroughly and cut them in half.
- Trim any excess fat from the chicken breasts, then season both sides lightly with salt and black pepper.
- Place the halved potatoes in an even layer across the bottom of the slow cooker.
- Arrange the seasoned chicken breasts over the potatoes.
- Sprinkle the ranch seasoning, garlic powder, and onion powder evenly over the chicken.
- Pour the cream of chicken soup and chicken broth over the chicken and potatoes.
- Gently stir around the potatoes to distribute the seasonings without moving the chicken too much.
- Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until the chicken is tender and fully cooked.
- Sprinkle the shredded cheddar cheese over the top during the final 10 minutes of cooking.
- Cover again and let the cheese melt completely.
- Garnish with chopped fresh parsley before serving.
Notes
- Prepare the ingredients the night before and refrigerate them for faster morning assembly.
- Freshly shredded cheddar cheese melts more smoothly than packaged shredded cheese.
- Boneless, skinless chicken thighs can replace the chicken breasts.
- Avoid lifting the slow cooker lid often because heat escapes and increases the cooking time.
- Store leftovers in an airtight container in the refrigerator for up to 4 days.
- Freeze leftovers for up to 3 months and thaw overnight in the refrigerator before reheating.
- If you do not have a slow cooker, bake the assembled dish in a covered baking dish until the chicken is fully cooked and the potatoes are tender.
