Description

Tender chuck roast cooks slowly in tangy Arby’s sauce, then gets shredded and piled onto onion rolls with warm cheddar cheese sauce. These easy Slow Cooker Beef and Cheddar Sandwiches recreate the popular restaurant favorite at home.


Ingredients

  • 23 pound chuck roast
  • 2 teaspoons dried minced onion
  • 1 teaspoon Montreal steak seasoning
  • 1 tablespoon Worcestershire sauce
  • 1 1/2 cups Arby’s sauce, plus more for serving
  • 1 cup cheddar cheese sauce
  • 6 onion rolls

Instructions

  1. Place the chuck roast in the bottom of a 6-quart slow cooker.
  2. Sprinkle the dried minced onion and Montreal steak seasoning evenly over the roast.
  3. Pour the Worcestershire sauce over the roast.
  4. Pour 1 1/2 cups of Arby’s sauce evenly over the meat.
  5. Cover and cook on LOW for 8 hours or HIGH for 4 hours, until the roast becomes tender.
  6. Shred the beef with two forks directly in the slow cooker.
  7. Stir the shredded beef into the sauce and switch the slow cooker to WARM.
  8. Heat the cheddar cheese sauce according to the package directions.
  9. Pile the shredded beef onto the onion rolls.
  10. Top each sandwich with warm cheddar cheese sauce and additional Arby’s sauce before serving.

Notes

  1. Add tomato, lettuce, and mayonnaise for a deluxe-style sandwich.
  2. Use spicy barbecue sauce when Arby’s sauce is unavailable.
  3. Replace the cheese sauce with shredded or sliced cheddar, allowing it to melt over the hot beef.
  4. Toast the onion rolls for added texture and crunch.
  5. Use hamburger buns, sandwich rolls, or dinner rolls instead of onion rolls.
  6. Store leftover beef in an airtight container in the refrigerator for up to 3 days.
  7. Reheat the beef gently in the microwave or on the stovetop before assembling fresh sandwiches.
