Description

A savory sloppy joe beef filling topped with cheesy Cheddar Bay biscuits, melted cheddar, and garlic herb butter.


Ingredients

  • 2 pounds ground beef
  • 3 cloves garlic, minced
  • 1/2 tablespoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 cup tomato sauce
  • 1 tablespoon Worcestershire sauce
  • 1 cup ketchup
  • 2 tablespoons yellow mustard
  • 1/2 cup packed light brown sugar
  • 1/2 cup shredded sharp cheddar cheese
  • 2 boxes (11.36 ounces each) Red Lobster Cheddar Bay Biscuit Mix
  • 1 1/2 cups cold water
  • 1 1/2 cups shredded sharp cheddar cheese, divided
  • 1/2 cup salted butter
  • Optional dried parsley for garnish

Instructions

  1. Preheat the oven to 350°F. Set out a 9-by-13-inch casserole dish.
  2. Cook and crumble the ground beef in a large skillet over medium-high heat until no pink remains.
  3. Drain the excess grease, then return the skillet to medium heat.
  4. Add the minced garlic and cook for about 1 minute.
  5. Stir in the onion powder, salt, pepper, tomato sauce, Worcestershire sauce, ketchup, mustard, and brown sugar.
  6. Simmer the beef mixture for 5 minutes, stirring occasionally.
  7. Spread the beef mixture evenly in the casserole dish.
  8. Sprinkle 1/2 cup shredded cheddar over the beef.
  9. Place both packages of biscuit mix in a large bowl and reserve the herb seasoning packets.
  10. Stir the cold water and 1 cup shredded cheddar into the biscuit mix until a sticky dough forms.
  11. Divide the dough into 12 portions and arrange them over the beef in four rows of three.
  12. Sprinkle the remaining 1/2 cup shredded cheddar over the biscuit dough.
  13. Bake uncovered on the middle oven rack for about 30 minutes, or until the center biscuits contain no wet dough.
  14. Melt the butter and whisk in both reserved herb seasoning packets.
  15. Remove the casserole from the oven and spoon the garlic herb butter evenly over the biscuits.
  16. Rest the casserole for 5 to 10 minutes before serving. Garnish with dried parsley, if desired.

Notes

  1. One pound of ground beef may replace two pounds without changing the remaining filling ingredients. The result will be saucier.
  2. For a thinner biscuit topping, use one box of biscuit mix and halve the water, topping cheese, butter, and seasoning.
  3. Prepared sloppy joe sauce may replace the homemade sauce. Use one can for each pound of ground beef.
  4. Oven temperatures vary, so check the center biscuits for doneness instead of relying only on baking time.
  5. Refrigerate leftovers in an airtight container for up to 4 days.
