½ cup (120 ml) dry white wine (e.g., Pinot Grigio)

1 cup (240 ml) coconut milk, cream, or whole milk

½ cup fresh basil leaves (12 g)

Instructions

Prep chicken: Place beaten egg and flour in separate bowls. Season chicken with salt and pepper. Dip each cutlet in egg, then dredge in flour.

Brown chicken: Heat 2 tbsp olive oil and 1 tbsp butter in a large skillet over medium heat. Add chicken and cook ~5 minutes per side until golden and nearly cooked through. Remove and set aside.

Cook herby corn: In the same skillet, add remaining olive oil and butter. Stir in corn, garlic, and thyme; sauté ~5 minutes until golden and fragrant.

Build sauce: Lower heat to medium-low. Add white wine and simmer for 2–3 minutes. Stir in coconut milk (or cream), smoked paprika, onion powder, chili powder, and cayenne. Taste and adjust seasoning.
