Instructions

  • Prepare shrimp: Peel and devein, keeping tails intact. Make shallow slits along the back and gently bend until straightened.

  • Dry shrimp: Pat thoroughly dry with paper towels.

  • Make batter: In a bowl, whisk potato starch, cake flour, salt, and cold water until smooth and thin.

  • Batter shrimp: Dip each shrimp to coat fully.

  • Heat oil: Warm oil in a deep pan to 175 °C (350 °F). Test with a wooden spoon or chopstick—bubbles should form rapidly.

  • Fry in batches: Fry 3–4 shrimp at a time. Drizzle 2 tsp batter over each shrimp for texture. Flip after 1 minute, drizzle again, and fry another 1–2 minutes until golden and crisp.

  • Drain: Transfer shrimp to a wire rack or paper towels.

  • Make dipping sauce: Mix tsuyu and cold water.

  • Serve immediately with dipping sauce on the side.

Notes

Use ice-cold water for the batter to keep it light and airy.

Drizzling extra batter mid-fry creates crisp “corners” for authentic texture.

Don’t overcrowd the pan—oil temperature must stay steady.

Leftovers reheat best in an oven or toaster oven at 200 °C (400 °F). Avoid microwaving.
