Description

Fresh Shrimp Spring Rolls packed with vegetables, noodles, and served with flavorful dipping sauces.


Ingredients

Scale
  • 1 lb shrimp
  • 3 oz vermicelli noodles
  • 15 lettuce leaves
  • 2 carrots
  • 1/2 cucumber
  • 1 cup cilantro
  • 15 rice paper sheets
  • 1/3 cup water
  • 1/4 cup fish sauce
  • 1/4 cup sugar
  • 2 tbsp lime juice
  • 2 tsp vinegar
  • 2 tsp chili garlic sauce
  • 1 garlic clove
  • 2 tsp sesame oil
  • 1 tbsp shredded carrot
  • 1 cup sesame dressing
  • 2 tbsp peanut butter

Instructions

  1. Boil shrimp and cool in ice water
  2. Slice shrimp in half lengthwise
  3. Cook noodles and rinse with cold water
  4. Prepare vegetables by cutting into thin strips
  5. Soften rice paper in warm water
  6. Layer lettuce, noodles, vegetables, and shrimp
  7. Roll tightly and seal
  8. Mix dipping sauce ingredients
  9. Shake peanut sauce ingredients until smooth

Notes

  1. Do not over-soak rice paper
  2. Keep rolls covered with damp towel
  3. Serve fresh for best taste
