Description

Shrimp Ceviche is a chilled, refreshing dip made with shrimp, fresh lime juice, and crisp vegetables.


Ingredients

Scale
  • 12 ounces cooked shrimp, peeled and chopped
  • 1/2 cup fresh lime juice
  • 2 Roma tomatoes, diced
  • 1 medium red onion, diced
  • 2 jalapeno peppers, seeded and diced
  • 1/4 cup fresh cilantro, chopped
  • 2 green onions, diced
  • 1/4 teaspoon kosher salt

Instructions

  1. Chop the cooked shrimp and place it in a medium bowl.
  2. Pour lime juice over the shrimp and toss gently to coat.
  3. Let the shrimp rest in the lime juice for 10 minutes.
  4. Add tomatoes, red onion, jalapenos, cilantro, green onions, and salt.
  5. Stir gently until combined.
  6. Cover and refrigerate for 30 minutes before serving.
  7. Serve chilled with tortilla chips.

Notes

  1. Use freshly squeezed lime juice for best flavor.
  2. Seed the jalapenos to control heat.
  3. Serve well chilled.
