Ingredients
For the Baked Potatoes:

4 large russet potatoes

For the Shepherd’s Pie Filling:

1 lb ground beef or lamb

1 small onion, diced

2 carrots, diced

2 cloves garlic, minced

1 cup beef broth

1 tbsp tomato paste

1 tsp Worcestershire sauce

½ tsp dried thyme

½ tsp dried rosemary

Salt and black pepper to taste

¾ cup frozen peas
For the Mashed Potato Topping:

½ cup milk

2 tbsp butter

¼ tsp garlic powder

Salt and black pepper to taste

½ cup shredded cheddar cheese (optional)
Instructions

Bake the Potatoes:
Preheat oven to 400°F (200°C). Scrub potatoes, prick with a fork, rub with olive oil and salt. Bake for 45–50 minutes until fork-tender. -
Cook the Filling:
Brown the ground beef or lamb in a skillet. Drain fat, then add onion, carrots, and garlic. Cook 5 minutes. -
Simmer:
Stir in tomato paste, Worcestershire sauce, thyme, rosemary, salt, pepper, and broth. Simmer 10 minutes. Stir in peas and remove from heat. -
Prepare Mashed Topping:
Slice off the top third of baked potatoes and scoop out the insides. Mash with milk, butter, garlic powder, salt, pepper, and cheese (if using). -
Assemble:
Fill each hollowed potato with meat mixture. Top with mashed potatoes and extra cheese if desired. -
Final Bake:
Return to the oven for 10–15 minutes until tops are golden and lightly crisp.
Notes
Can substitute ground turkey or lentils for a lighter or vegetarian version.
Leftover mashed potatoes work well to save time.
