Description

Sheet Pan Cashew Chicken is an easy one pan meal made with tender chicken, colorful vegetables, crunchy cashews, and a savory Asian inspired sauce.


Ingredients

Scale
  • 1 pound boneless skinless chicken breasts cut into bite sized pieces
  • 1 red bell pepper chopped
  • 1 green bell pepper chopped
  • 1 red onion diced
  • 1 cup unsalted cashews
  • 1/4 cup soy sauce
  • 3 tablespoons honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 3 cloves garlic minced
  • 1 teaspoon fresh ginger minced
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat oven to 400°F.
  2. Whisk soy sauce honey rice vinegar sesame oil garlic and ginger in a bowl.
  3. Add chicken and marinate at least 15 minutes.
  4. Spread chicken bell peppers and onion on a sheet pan in a single layer.
  5. Pour remaining marinade over top and season with salt and pepper.
  6. Bake 20 minutes then stir.
  7. Add cashews and bake 10 to 15 more minutes until chicken is cooked through.
  8. Garnish with fresh cilantro and serve.

Notes

  1. Marinate longer for deeper flavor.
  2. Do not overcrowd the pan to ensure proper roasting.
  3. Store leftovers in the refrigerator up to 3 days.
