Description

Ingredients

  • 1/4 cup whole milk
  • 1/2 cup shredded Mexican cheese
  • 1/4 cup green pepper, diced
  • 2 tablespoons chives
  • Green onions
  • 1/4 cup diced ham

Instructions

  1. Preheat oven to 375 F and spray a half sheet pan with nonstick spray.
  2. Whisk eggs and milk for about 2 minutes until well combined.
  3. Pour egg mixture into the sheet pan and sprinkle with ham, peppers, and chives.
  4. Bake for 11 minutes, remove from oven, add cheese, and bake 2 more minutes.
  5. Cool slightly, cut into squares, and serve with toasted English muffins.
