Description

Fresh and crunchy sesame chicken salad made with cabbage, colorful vegetables, juicy chicken, and sesame ginger dressing.


Ingredients

Scale
  • 1 lb boneless skinless chicken breasts
  • 6 cups shredded green cabbage
  • 2 cups shredded red cabbage
  • 1 cup shredded carrots
  • 1 red bell pepper, thinly sliced
  • 1 cup shelled edamame
  • 3 green onions, sliced
  • 2 tablespoons sesame seeds
  • 1 tablespoon olive oil
  • 1/4 cup sesame ginger dressing

Instructions

  1. Slice all vegetables thinly and evenly
  2. Season chicken with salt and pepper
  3. Cook chicken in a skillet or grill pan until fully cooked
  4. Rest chicken briefly, then slice
  5. Combine vegetables and chicken in a large bowl
  6. Add dressing and toss gently
  7. Top with sesame seeds and serve

Notes

  1. Keep dressing separate if meal prepping
  2. Slice vegetables thin for best texture
