Description

Rich, fudgy zucchini brownies made with applesauce, oat flour, cocoa powder, and finely grated zucchini. Each plain brownie contains about 87 calories when the pan is divided into 20 servings.

Instructions

  1. Preheat the oven to 350°F. Lightly grease a 9-by-13-inch baking pan or line it with parchment paper.
  2. Wash and finely grate the zucchini. Firmly pack it into a measuring cup without squeezing out the liquid.
  3. Stir the zucchini, brown sugar, applesauce, eggs, and vanilla together in a large bowl.
  4. Whisk the oat flour, cocoa powder, baking soda, baking powder, cinnamon, and salt together in a separate bowl.
  5. Add the dry ingredients to the wet ingredients and stir just until combined.
  6. Fold in chocolate chips or nuts, if using.
  7. Spread the batter evenly in the prepared pan and smooth the top.
  8. Bake for about 55 minutes, or until a toothpick inserted near the center comes out with moist crumbs.
  9. Cool the brownies in the pan for at least 30 minutes before slicing.
  10. For the optional frosting, melt the chocolate chips, butterscotch chips, and peanut butter together until smooth. Spread over completely cooled brownies.
