Description

Tender seared salmon served over creamy lemon orzo with spinach and parmesan cheese in one easy skillet meal.


Ingredients

Scale
  • 4 skinless salmon fillets
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 1 teaspoon garlic powder or Italian seasoning
  • 2 tablespoons butter
  • 3 garlic cloves minced
  • 1 small shallot finely chopped
  • 1/4 cup white wine
  • 2 1/2 cups chicken broth
  • 1 1/2 cups orzo pasta
  • 1/2 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 1 tablespoon fresh lemon juice
  • 2 cups fresh baby spinach
  • 1/2 cup diced bell peppers optional
  • 1/2 cup cherry tomatoes optional
  • 1 teaspoon lemon zest
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Season the salmon fillets with salt, pepper, and garlic powder.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Sear salmon for 2 minutes on each side until golden.
  4. Remove salmon from the skillet and set aside.
  5. Melt butter in the same skillet over medium heat.
  6. Add garlic and shallots and cook for 1 to 2 minutes.
  7. Pour in white wine and scrape browned bits from the pan.
  8. Add chicken broth and bring to a simmer.
  9. Stir in orzo pasta and cook for about 10 minutes.
  10. Mix in heavy cream, parmesan cheese, and lemon juice.
  11. Add spinach and cook until wilted.
  12. Return salmon to the skillet and warm through.
  13. Garnish with parsley and lemon zest before serving.

Notes

  1. Use freshly grated parmesan for the smoothest sauce.
  2. Pat salmon dry before searing for a crisp crust.
  3. Add extra broth while reheating leftovers if needed.
