Description

Quick and delicious flat top griddle vegetables cooked to perfection with a light char and tender texture. These seared griddle vegetables make an easy healthy side dish for any meal.


Ingredients

  • 13 tablespoons olive oil
  • ½ pound asparagus
  • 2 zucchini
  • 1 bell pepper
  • 1 red onion
  • 1 head broccoli
  • 1 tablespoon all purpose seasoning
  • 2 tablespoons butter, melted

Instructions

  1. Preheat the flat top griddle to medium high heat around 400°F to 425°F and check temperature with an infrared thermometer.
  2. Slice asparagus, zucchini, bell pepper, onion, and broccoli into bite sized pieces about 1 inch wide.
  3. Place vegetables in a large bowl, add melted butter, sprinkle with all purpose seasoning, and toss to coat.
  4. Spread olive oil over the hot griddle surface to prevent sticking.
  5. Add vegetables to the griddle in an even layer and cook without moving for 2 to 3 minutes to develop light charring.
  6. Flip vegetables using a large metal spatula and cook another 2 to 3 minutes.
  7. Test zucchini and asparagus with a fork until tender.
  8. Taste and adjust seasoning before serving.

Notes

  1. For extra flavor marinate vegetables with balsamic vinegar, soy sauce, garlic, sesame oil, salt, and pepper for 15 minutes before cooking.
  2. Do not move vegetables for the first few minutes so they develop a smoky char.
  3. Try hibachi style seasoning with soy sauce and sesame oil.
  4. Drizzle balsamic glaze for a tangy variation.
  5. Add red pepper flakes for heat.
