Description
Quick and delicious flat top griddle vegetables cooked to perfection with a light char and tender texture. These seared griddle vegetables make an easy healthy side dish for any meal.

- 1–3 tablespoons olive oil
- ½ pound asparagus
- 2 zucchini
- 1 bell pepper
- 1 red onion
- 1 head broccoli
- 1 tablespoon all purpose seasoning
- 2 tablespoons butter, melted
Instructions
- Preheat the flat top griddle to medium high heat around 400°F to 425°F and check temperature with an infrared thermometer.
- Slice asparagus, zucchini, bell pepper, onion, and broccoli into bite sized pieces about 1 inch wide.
- Place vegetables in a large bowl, add melted butter, sprinkle with all purpose seasoning, and toss to coat.
- Spread olive oil over the hot griddle surface to prevent sticking.
- Add vegetables to the griddle in an even layer and cook without moving for 2 to 3 minutes to develop light charring.
- Flip vegetables using a large metal spatula and cook another 2 to 3 minutes.
- Test zucchini and asparagus with a fork until tender.
- Taste and adjust seasoning before serving.
Notes
- For extra flavor marinate vegetables with balsamic vinegar, soy sauce, garlic, sesame oil, salt, and pepper for 15 minutes before cooking.
- Do not move vegetables for the first few minutes so they develop a smoky char.
- Try hibachi style seasoning with soy sauce and sesame oil.
- Drizzle balsamic glaze for a tangy variation.
