Ingredients
-
15 wooden skewers (optional)

2 lbs ground beef (or half beef, half pork)
-
1 egg
-
1/4 cup dried or 1/2 cup fresh parsley, minced
-
1 tsp onion powder
-
1 tsp garlic powder or minced garlic cloves
-
1 tsp paprika
-
1 tsp salt
-
1/2 tsp ground cumin
-
1/2 tsp black pepper
Instructions
-
Soak wooden skewers in water for at least 30 minutes if using.
-
Preheat grill to medium-high or oven to 350°F (175°C).
-
Mix ingredients in a large bowl until just combined.
-
Shape into oblong patties. Thread onto skewers or leave freeform.
-
Grill method: Cook for 20 minutes, turning halfway, until golden-brown and internal temp reaches 160°F (71°C).
-
Oven method: Bake for 20 minutes on a foil-lined tray. Broil 1–2 minutes at the end for a crispy finish.
-
Rest the kebabs for a few minutes before serving.
Notes
Chill the mixture before shaping if too soft.
Add cinnamon or allspice for deeper Mediterranean notes.
Fresh garlic adds more flavor, but powder works fine.
Serve with rice, pita, Greek salad, or dips like tzatziki and hummus.
Leftovers can be refrigerated for up to 4 days or frozen.
