Description

The Sausage and Peppers Sandwich is a warm, comforting meal made with juicy Italian sausages, sweet caramelized peppers and onions, and a tangy tomato sauce all nestled in toasted, buttered sub rolls. It’s an easy, satisfying recipe perfect for busy nights or casual gatherings.


Ingredients

  • 6 Italian sausages (approx. 14 oz / 400 g)

  • 4 sub rolls or baguettes (15 cm each), warmed

  • 1 can (14 oz / 400 g) chopped tomatoes

  • ¼ cup (60 ml) chicken stock

  • 2 large bell peppers, sliced

  • 1 medium onion, sliced

  • 2 garlic cloves, finely diced

  • 1 heaped tbsp tomato paste

  • 1 tbsp red wine vinegar

  • ½ tsp dried basil

  • ½ tsp dried oregano

  • ¼½ tsp chili flakes

  • Sugar, salt, and pepper to taste

  • 4 tbsp butter, as needed (for rolls)

  • 4 pinches of Parmesan cheese

  • Olive oil, for frying

  • Fresh parsley, optional (for garnish)


Instructions

  • Cook Sausages: In a large skillet, heat olive oil over medium heat. Add sausages and cook for 15–20 minutes, turning occasionally, until browned and cooked through. Set aside.

  • Caramelize Veggies: In the same pan, cook peppers and onions over slightly higher heat for about 8 minutes, until softened and caramelized.

  • Add Garlic & Paste: Stir in garlic for 1 minute. Add tomato paste and cook for 2 more minutes.

  • Deglaze & Build Sauce: Add chicken stock and scrape the pan. Stir in canned tomatoes, vinegar, herbs, chili flakes, sugar, salt, and pepper.

  • Simmer with Sausage: Slice sausages and return to the pan. Simmer everything together for 15–20 minutes until thickened.

  • Assemble Sandwiches: Butter the inside of warm rolls. Fill with sausage and pepper mixture. Top with Parmesan and parsley if using. Serve warm.

Notes

Use sweet or spicy Italian sausage to customize flavor.

Tomato paste adds depth—don’t skip it.

Toasting buttered rolls enhances texture and flavor.

Make it less spicy by using mild sausage and omitting chili flakes.
