  • 1 onion, chopped

  • 2 cloves garlic, minced

  • 4 cups broth (chicken or vegetable)

  • 1 teaspoon Italian seasoning

  • Salt and pepper to taste


Instructions

  1. Brown the Sausage: Heat a large pot over medium-high heat. Break the sausage into small pieces and brown it, stirring occasionally.

  2. Sauté Aromatics: Add chopped onions and minced garlic. Sauté for 3-4 minutes until soft and fragrant.

  3. Deglaze the Pot: Pour in a little broth or water to lift any browned bits from the bottom of the pot. Stir to combine.

  4. Add Vegetables and Broth: Add carrots, potatoes, and beans to the pot. Pour in the broth and stir. Bring to a simmer.

  5. Simmer the Soup: Reduce heat and let the soup simmer for 30 minutes or until vegetables are tender.

  6. Add Greens: Stir in the leafy greens and cook for 5 more minutes until wilted.

  7. Season: Taste and adjust seasoning with salt, pepper, and Italian seasoning.

  8. Optional Additions: For a heartier soup, add small pasta or more beans. Cook for 10-15 minutes until tender.

Notes

For a spicier version, use spicy sausage or add red pepper flakes.

If you prefer a vegetarian option, swap the sausage with plant-based sausage or more beans.

You can freeze the soup for up to 3 months.
