- 2 tablespoons milk
- Gel food coloring (pink, yellow, green, blue, purple)
- ½ cup unsalted butter, softened (for filling)
- 2 cups powdered sugar
- 2 tablespoons heavy cream or milk
- 1 teaspoon vanilla extract (for filling)
- Pinch of salt
Instructions
- Preheat oven to 350°F and line baking sheet with parchment paper.
- Beat butter and sugar until light and fluffy.
- Add egg and vanilla and mix well.
- Whisk dry ingredients separately and gradually mix into wet ingredients.
- Add milk and mix until combined.
- Divide dough and color with gel food coloring.
- Roll tablespoon-sized balls and place 2 inches apart.
- Bake 8-10 minutes until edges set and tops crack slightly.
- Cool completely.
- Beat filling ingredients until fluffy.
- Spread filling between matched cookie pairs and let set 10 minutes.
Notes
- Use gel food coloring for best pastel shades.
- Chill dough if too soft.
- Store in airtight container up to 3 days at room temperature or 1 week refrigerated.
