Ingredients

  • 2 cups spinach or romaine lettuce

  • 1 cup shredded carrots

  • 1 cucumber, sliced

  • 1 bell pepper, sliced

  • 1/2 cup edamame or tofu (or grilled chicken)

  • 2 tbsp soy sauce

  • 1 tbsp sesame oil

  • 1 tbsp rice vinegar

  • 1 tsp honey

  • 1 clove garlic, minced

  • 1 tbsp fresh ginger, minced

  • Optional: Chili flakes, lime juice, toasted sesame seeds, or crispy wonton strips


Instructions

  • Prepare your vegetables: slice cucumber, shred carrots, and slice bell pepper.

  • If using tofu or chicken, cook and cut into bite-sized pieces.

  • In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, honey, garlic, and ginger.

  • In a large bowl, combine your vegetables and protein.

  • Pour the dressing over the salad and toss to coat evenly.

  • Serve immediately, topped with optional crunchy garnishes or lime juice.

Notes

You can swap tofu for edamame or grilled shrimp for a different protein.

Adjust sweetness with more honey or make it spicier by adding chili flakes.

The salad can be served with rice noodles or served as-is for a lighter meal.
