Description

Lightened-up cucumber dill rotisserie chicken salad made with Greek yogurt. Fast, fresh, and filling without feeling heavy.


Ingredients

Scale
  • 3 cups rotisserie chicken, chopped
  • 2/3 cup full-fat Greek yogurt
  • 1 tablespoon Dijon mustard
  • Juice of 1/2 lemon
  • 1/3 cup green onion, chopped
  • 3/4 cup seedless cucumber, peeled and chopped
  • 1/2 cup celery, chopped
  • 1/4 cup fresh parsley, chopped
  • 1 teaspoon dried dill
  • 1 teaspoon sea salt
  • 1/4 teaspoon black pepper

Instructions

  1. Chop chicken and vegetables.
  2. Add chicken, yogurt, mustard, and lemon juice to a bowl and mix.
  3. Fold in remaining ingredients until combined.
  4. Taste and adjust seasoning.
  5. Serve immediately or chill briefly.

Notes

  1. Add cucumber just before serving if making ahead.
  2. Use chilled rotisserie chicken for best texture.
  3. Full-fat Greek yogurt keeps the salad creamy.
