Roasted Jalapeño Popper Grilled Cheese is the ultimate fusion of spicy, creamy jalapeño poppers and the melty, comforting goodness of grilled cheese. This sandwich features roasted jalapeños, cream cheese, and sharp cheddar or Monterey Jack between crispy slices of buttery bread. For the Filling:

  • 23 fresh jalapeños

  • 1/4 cup cream cheese, softened

  • 1/2 cup shredded cheddar or Monterey Jack cheese

  • 1/4 tsp garlic powder

  • Pinch of salt and pepper

For the Sandwich:

  • 4 slices of sourdough or Texas toast

  • 2 tbsp butter or mayonnaise (for spreading)


Instructions

  • Roast the Jalapeños

    • Preheat oven to 400°F (200°C).

    • Place whole jalapeños on a baking sheet and roast for 15–20 minutes until skins blister.

    • Let them cool, peel the skin, remove seeds for less heat, and finely chop.

  • Prepare the Filling

    • In a bowl, mix softened cream cheese, shredded cheese, garlic powder, and chopped roasted jalapeños until well combined.

  • Assemble the Sandwich

    • Spread the jalapeño cheese mixture onto two slices of bread.

    • Top with the other bread slices.

    • Lightly butter or spread mayo on the outside of both slices.

  • Cook the Sandwich

    • Heat a skillet over medium heat.

    • Cook sandwiches 3–4 minutes per side, until bread is golden and cheese is melted.

    • Slice and serve warm.

Notes

  • Remove seeds from jalapeños to reduce spice.
