- 1 1/3 cups white granulated sugar
- 2 large eggs
- 1 egg yolk
- 5 tablespoons unsalted butter, melted

- 1 teaspoon pure vanilla extract
- 3/4 cup all-purpose flour
- 3/4 cup Dutch-process cocoa powder
- 1 tablespoon cornstarch
- 1 teaspoon salt
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat oven to 400°F and line a baking sheet with parchment paper.
- Spread cherries on the baking sheet and sprinkle lightly with sugar.
- Roast cherries for 10 minutes and cool completely.
- Reduce oven temperature to 325°F.
- Prepare an 8×8-inch baking pan with parchment paper and baking spray.
- Sift together flour, cocoa powder, cornstarch, and salt.
- Beat sugar, eggs, and egg yolk for 5 minutes until fluffy.
- Mix in melted butter, oil, and vanilla extract.
- Fold dry ingredients gently into the wet ingredients.
- Fold in half of the roasted cherries and chocolate chips.
- Spread batter evenly into prepared pan.
- Bake for 40 to 50 minutes until edges are set and center remains slightly soft.
- Cool completely, chill briefly, top with remaining cherries, slice, and serve.

- Do not overmix the brownie batter.
