A homemade rhubarb simple syrup with a tart and sweet flavor, perfect for refreshing beverages and desserts.
Ingredients

- 4 cups rhubarb, chopped
- 6 cups sugar
- 6 cups water
- 1 tablespoon vanilla extract (optional)
Instructions
- Wash and chop the rhubarb into small pieces
- Add rhubarb, sugar, and water to a large pot
- Bring to a gentle simmer over medium heat
- Stir occasionally until sugar dissolves
- Simmer for 30 minutes until rhubarb softens
- Remove from heat and strain through a fine mesh sieve
- Stir in vanilla extract if using
- Let syrup cool and transfer to jars

- Keep sugar ratio if planning to can the syrup
- Store in refrigerator for up to 2 weeks
- Freeze for longer storage
