Description

Delicate rhubarb scones with a tender crumb and lightly sweet, tangy flavor, perfect for brunch or afternoon tea.


Ingredients

Scale
  • 1 cup chopped rhubarb
  • 1/2 cup granulated sugar
  • 2 1/4 cups all-purpose flour
  • 1 Tbsp baking powder
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 8 Tbsp unsalted butter, cold and cut into pieces
  • 1/2 cup cold buttermilk or half and half

Instructions

  1. Preheat oven to 375°F and line a baking sheet with parchment paper
  2. Combine flour, sugar, baking powder, and salt in a food processor
  3. Add cold butter and pulse until mixture resembles coarse crumbs
  4. Transfer mixture to a bowl and stir in buttermilk and vanilla extract
  5. Gently fold in chopped rhubarb
  6. Turn dough onto floured surface and knead lightly until combined
  7. Shape dough and cut into rounds or squares
  8. Place on baking sheet and bake for 20 minutes until lightly golden

Notes

  1. Do not overmix the dough to keep scones tender
  2. Use cold butter for a flaky texture
  3. Freeze extra rhubarb for future baking
