Description
This easy Rhubarb Impossible Pie creates its own crust while baking and features a creamy custard with tart rhubarb and a sweet streusel topping.
Ingredients

- 3 cups rhubarb chopped
- 3 eggs
- 1/2 cup Bisquick
- 3 Tbsp melted butter
- 1/4 tsp salt
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1 1/4 cups sugar
- 1 tsp vanilla extract
- 1 cup milk
- 2 Tbsp butter cold
- 1/2 cup Bisquick
- 1/4 cup brown sugar
- 1/2 tsp cinnamon
- 1/4 cup walnuts chopped
Instructions
- Preheat oven to 375°F and grease a 10-inch pie plate
- Spread chopped rhubarb evenly in the pie dish
- Blend eggs, Bisquick, melted butter, salt, cinnamon, nutmeg, sugar, vanilla, and milk for 3 minutes
- Pour custard mixture over rhubarb
- Mix streusel ingredients and sprinkle on top
- Bake for 45 to 55 minutes until set in center
- Cover with foil if top browns too quickly

- Use fresh rhubarb for best flavor
- Drain frozen rhubarb well before using
