Description

Rhubarb Custard Pie is a creamy, sweet-tart dessert with a rich custard filling baked over fresh rhubarb in a flaky pie crust.


Ingredients

  • 1 unbaked pie shell
  • 3 cups chopped rhubarb
  • 1 1/4 cups granulated sugar
  • 3 eggs beaten
  • 1 cup heavy whipping cream
  • 3 tablespoons flour
  • 1/2 teaspoon salt

Instructions

  1. Preheat oven to 400°F
  2. Place chopped rhubarb into the unbaked pie shell
  3. Whisk sugar, eggs, cream, flour, and salt until smooth
  4. Pour the mixture evenly over the rhubarb
  5. Bake for 10 minutes at 400°F
  6. Reduce heat to 350°F and bake for 40 minutes
  7. Remove when center is slightly jiggly
  8. Cool completely before slicing and serving

Notes

  1. If using frozen rhubarb, thaw and pat dry before use
  2. Toss rhubarb with 1 tablespoon flour to reduce excess moisture
  3. Allow pie to cool fully to set properly
