Description

A classic Rhubarb Custard Crisp with sweet and tart flavors, creamy custard, and a crunchy topping.


Ingredients

Scale
  • 3 cups rhubarb sliced
  • 2 eggs beaten
  • 2 tablespoons milk
  • 1 1/2 cups sugar
  • 3 tablespoons flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 1 tablespoon butter
  • 1/2 cup butter
  • 1/2 cup brown sugar
  • 1 cup flour

Instructions

  1. Preheat oven to 400°F and grease a 9-inch pan
  2. Mix brown sugar and flour, then cut in butter to form crumbs
  3. Combine eggs, milk, sugar, flour, salt, and nutmeg
  4. Stir in rhubarb and pour into pan
  5. Dot with butter and sprinkle topping
  6. Bake for 50 minutes until golden brown

Notes

  1. Use fresh or thawed rhubarb
  2. Drain frozen rhubarb well
  3. Let cool before serving
