Description

Flaky puff pastry filled with sweet cream cheese and tart rhubarb, finished with a smooth glaze.


Ingredients

Scale
  • 2 sheets frozen puff pastry, thawed
  • 8 ounces cream cheese
  • 2 tablespoons sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups rhubarb, cut into 1-inch pieces
  • 1 tablespoon water
  • 2 cups confectioner’s sugar
  • 2 tablespoons milk

Instructions

  1. Preheat oven to 400°F and line a baking sheet with parchment paper
  2. Beat cream cheese, sugar, one egg, and vanilla until smooth
  3. Roll out puff pastry and cut into rectangles
  4. Place pastry on baking sheet and spread cream cheese mixture in center
  5. Top with rhubarb pieces
  6. Whisk remaining egg with water and brush pastry edges
  7. Bake for 15 minutes until golden and puffed
  8. Cool slightly, then mix glaze and drizzle over danishes before serving

Notes

  1. Keep puff pastry cold before baking for best results
  2. Do not overfill to allow proper puffing
  3. Use fresh rhubarb for best flavor and texture
