Description

A fresh and colorful Rainbow Fruit Salad tossed in a sweet honey lime dressing. Perfect as a light dessert or refreshing side dish.


Ingredients

  • 1 lb fresh strawberries, chopped
  • 1 lb fresh pineapple, chopped
  • 12 oz fresh blueberries
  • 12 oz red grapes, halved
  • 4 kiwis, peeled and chopped
  • 3 mandarin oranges
  • 2 bananas, sliced (optional)
  • 1/4 cup honey
  • 2 tsp lime zest
  • 1 1/2 Tbsp fresh lime juice

Instructions

  1. Wash and prepare all fruit by chopping into bite-sized pieces.
  2. Add all prepared fruit to a large mixing bowl.
  3. In a small bowl, whisk together honey, lime zest, and lime juice.
  4. Pour the dressing over the fruit.
  5. Gently toss until evenly coated.
  6. Serve immediately for best flavor.

Notes

  1. Fruit can be chopped one day in advance except bananas.
  2. Keep dressing separate until ready to serve.
  3. Drain canned mandarin oranges well if using.
  4. Best served fresh and chilled.
