Ingredients

  • 225 g (1 3/4 cups) self-raising flour

  • 50 g (3 1/2 tbsp) unsalted butter, diced and chilled

  • 1 pinch salt

  • 1 tbsp (12 g) caster sugar

  • 150 ml (1/2 cup + 2 tbsp) milk


Instructions

  • Preheat oven to 200°C (400°F) and line a baking tray with parchment.

  • Sift flour, salt, and sugar into a large bowl.

  • Rub in chilled butter until the mixture resembles breadcrumbs.

  • Slowly stir in milk just until dough forms—do not overmix.

  • Turn out onto floured surface; pat or roll to 2–3 cm thickness.

  • Cut scones using a round cutter and place on tray.

  • Brush tops with milk.

  • Bake for 15 minutes or until golden and puffed. Cool slightly before serving.

Notes

Use cold butter for flaky texture.

Handle the dough gently to avoid dense scones.

Add a little extra milk if too dry or flour if sticky.

Don’t twist the cutter—press straight down for even rise.

Best served with cream and jam or cheese and butter.
