- 1 lb ground beef
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 large flour tortillas
- 2 cups shredded cheddar cheese
- 1/4 cup chopped dill pickles
- 1/2 cup mayonnaise
- 2 tbsp ketchup
- 1 tbsp minced onion
- 2 tbsp minced pickles
- 2 tsp white vinegar
Instructions
- Preheat the griddle or flat top to medium-high heat around 400°F.
- Cook the ground beef on the griddle until browned and fully cooked while seasoning with salt and black pepper.
- In a bowl combine mayonnaise, ketchup, minced onion, minced pickles, and white vinegar to create the special sauce.
- Place tortillas on the griddle and spread special sauce over one half of each tortilla.
- Add cooked ground beef, chopped pickles, and shredded cheddar cheese.
- Fold the tortillas in half to form quesadillas.
- Cook for about 2 to 3 minutes until the tortilla becomes golden brown and crispy.
- Flip and cook another 2 to 3 minutes until the cheese melts and the tortilla crisps.
- Remove from the griddle and slice each quesadilla into wedges before serving.
Notes
- Use ground beef with 80/20 fat ratio for the juiciest flavor.
- Avoid overfilling tortillas to keep them easy to flip.
- Let the quesadilla burger rest for 2 minutes before slicing to help the cheese set.
