Instructions
- Preheat the oven to 375°F. Line two large baking sheets with parchment paper.
- Whisk the flour, pumpkin pie spice, baking soda, and salt together in a medium bowl.
- Beat the softened butter, brown sugar, and granulated sugar on medium speed for about 5 minutes, until pale and fluffy. Scrape down the bowl as needed.
- Add the eggs and vanilla extract. Mix only until combined.
- Reduce the mixer to low speed. Gradually add the dry ingredients and mix until no visible flour streaks remain.
- Fold in the white chocolate chips and pumpkin spice baking chips.
- Scoop 2-tablespoon portions of dough onto the prepared baking sheets, leaving about 2 inches between each cookie.
- Bake one pan at a time for 10 to 14 minutes, until the edges look lightly golden and the centers remain soft.
- Cool the cookies on the baking sheet for 5 minutes, then transfer them to a wire rack.
Notes
- Measure the flour by spooning it into the measuring cup and leveling the top.
- Use softened butter rather than melted butter to limit spreading.
- Reserve a few baking chips and press them onto the dough before baking for a bakery-style appearance.
