Description

Soft and chewy no-bake Pumpkin Protein Balls made with rolled oats, vanilla protein powder, pumpkin pie spice, almond butter, pumpkin puree, and natural sweetener. They make a quick fall snack for meal prep, lunchboxes, or post-workout fuel.


Ingredients

  • 1 cup rolled oats, certified gluten-free if needed
  • 2 scoops vanilla protein powder
  • 1 teaspoon pumpkin pie spice
  • 1/2 cup creamy almond butter
  • 1/3 cup pumpkin puree
  • 1/4 cup raw honey, or pure maple syrup for a vegan version

Instructions

  1. Add the rolled oats, vanilla protein powder, and pumpkin pie spice to a large mixing bowl. Stir until evenly combined.
  2. Add the almond butter, pumpkin puree, and honey or maple syrup.
  3. Stir firmly until the mixture looks evenly combined and no dry streaks remain.
  4. Scoop approximately 1 tablespoon of mixture for each ball.
  5. Roll each portion between your palms and place it on a parchment-lined plate or tray.
  6. Repeat until you have approximately 22 small balls.
  7. Freeze for 10 minutes, or refrigerate for 30 minutes, until firm.
  8. Serve immediately or transfer the balls to an airtight container for storage.

Notes

  1. Use pure pumpkin puree rather than sweetened pumpkin pie filling.
  2. Use certified gluten-free rolled oats when preparing the recipe for a gluten-free diet.
  3. Choose maple syrup instead of honey for a vegan version.
  4. Replace almond butter with peanut butter, cashew butter, or sunflower seed butter when preferred.
  5. If the mixture feels too wet, add rolled oats 1 tablespoon at a time.
  6. If the mixture feels too dry, add pumpkin puree, maple syrup, or water 1 teaspoon at a time.
  7. Optional mix-ins include mini chocolate chips, chopped pecans, pumpkin seeds, toasted coconut, or hemp hearts.
  8. Refrigerate in an airtight container for up to 4 days.
  9. Freeze in a freezer-safe container for up to 3 months.
