Description

  • 1 3/4 cups pumpkin puree
  • 3/4 cup brown sugar, firmly packed
  • 3 large eggs
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 teaspoon ground ginger
  • 1 teaspoon salt
  • 1 3/4 cups whole milk

Instructions

  1. Preheat the oven to 375°F.
  2. Press the pie crust into a 9-inch pie dish, then place the dish on a baking sheet to catch any spills.
  3. In a large mixing bowl, whisk together the pumpkin puree, brown sugar, eggs, cinnamon, nutmeg, ginger, and salt until well combined.
  4. Pour in the whole milk and whisk until the filling is smooth and the eggs are fully incorporated.
  5. Pour the pumpkin filling into the prepared pie crust.
  6. Loosely cover the crust edges with foil, if desired, to prevent over-browning.
  7. Bake for 60 to 70 minutes, checking the pie after 60 minutes.
  8. Remove the pie from the oven when the filling is mostly set but still has a slight jiggle in the center.
  9. Cool the pie completely on a wire rack.
  10. Cover the pie tightly and refrigerate for about 5 hours, or until fully chilled and firm.
  11. Slice and serve with whipped cream or your favorite topping.

  1. Lightly grease the pie dish or dust it with a small amount of flour to help prevent sticking.
  2. Adjust the cinnamon, nutmeg, ginger, or brown sugar slightly to match your preferred spice and sweetness level.
